Packed and Planned

This semester I have a shift every single week that starts around 6 am and my boyfriend works several 6 am shifts. I wanted something that we could grab really quickly to eat for breakfast because no one wants to wake up earlier than they have to and I’m never really that hungry in the morning!

I did a few typical breakfast foods that were easy, hard boiled eggs, overnight oats, eggo waffles. That sort of stuff. I wanted it to be cheap and easy and preferably homemade.

I decided to make some homemade granola bars, that were a little more filling, hopefully!



2 Cups Oatmeal, 1/4 C Almond Milk, 1 TBS Maple Syrup

2 Whole Eggs, 1 Cup Blue Berries, A Pinch of Salt

I mixed everything together and put it in a greased muffin pan for 25 minutes at 350 degrees.

In total this recipe made 12 muffins, I threw six of them into the freezer and the other six into my fridge.

I figured this would be a really good snack to have in the morning before I get to work! I could smother some peanut butter between two of them or just eat them plain, I could also always add some eggs and make this a meal! This is one of my new favorite things and my boyfriend loves them too. I’m hoping that these will remain a quick, delicious, and healthy snack for us!
